These quick vegan nachos are amazing. It’s really the fusion of textures that makes them so good. The crunchy pita chips for the base, the spiced beans combined with peppers, the creamy sauce (that was purposely not an imitation of cheese), and some homemade guacamole with cilantro to top it off.
I like that you can eat these with your hands or if you’re not feeling up for the mess, you can also grab a fork. They are exciting for kids and especially husbands! This recipe is actually my husband’s request.
At work, Tyler often gets to sample food products that are being promoted. It’s a cool reason to eat in the cafe when the menu is always changing. At the same time, his research group will also have occasional banquet served lunches. He came home from one of these saying I had to figure out how to make some vegan nachos. Using pita chips as the base is different than your typical nachos because they have a thicker *crunch to them. I’ve tried the Athenos and Stacey’s pita chips and prefer the Athenos. They aren’t as thick and easier to hold all the other good stuff on top. You could certainly use your favorite regular tortilla chips as well.
After figuring out your bottom crunchy layer, it’s time for your bean mixture. This is SUPER versatile. If you want something in there, throw it in, if not, take it out. Maybe wilt some kale and add it. And how about carrot ribbons? That’s a fun idea. If you don’t like peppers, maybe sub some corn or hominy instead. And please add cilantro…if you’re into that like I am.
Remember the creamy cashew dip? Seriously good eats. It brings these vegan nachos up a full 20 notches. You have to try it. As a veggie dip it’s awesome – a fun switch from other dips. As a sauce on nachos it brings its creaminess to its crunchy counterparts and is the perfect combo.
As a mostly vegan eater, I’ve decided I do NOT LIKE nutritional yeast. If it’s in super small amounts in something, I can palate it, but in general it is not an acclaimed flavor for me. This sauce does not have any nutritional yeast in it so dip in yeast-free peace.
I am an avocado lover. They make everything better, brighter, and more exciting to eat. I love costco because their avocados stay fresher way longer than winco. I love winco because their avocados are so cheap.
The simplest guacamole you’ll ever make:
Mash with a fork on the closest plate you can find and try to save for your actual meal. I forgive you if you eat it before meal time.
Now you are ready for the whole shebang. Layer it, eat it, share it, love it, and tell your friends about it. It’s probably a good thing I’m getting hungry just writing this.
