I love salads the most when there’s something saucy and wet to glue it all together. Otherwise I feel like I have to chew way too much. Nothing like ending your salad feeling like your jaw needs a massage.
My favorite dressing to top salads with is Hummus + a little extra oomph.
I start with a good scoop of hummus. I’d say 1/4 to 1/3 cup.
Then I add a sprinkle of salt, at least 1 Tbsp lemon juice, and some water.
After mixing this together, it should be nice and creamy. Perfect to meld your greens and toppings. I like to taste test first and find that I love having extra lemon flavor in this. It’s a great balance.
If I really want to make a good salad, I love having a warm ingredient on top.
Diced sweet potato is one of my go-to warm toppings. Peel your sweet potato, cube it, and put it in the microwave (covered and with a little water) for about 7 minutes.
